



The Scrubland (Cerrado) is the world's richest savannah in biodiversity, with 12 thousand species identified, scattered across 37 environments, forming a vegetation complex with multiple landscapes, which occupies approximately 36% of the Brazilian territory, considering their transitional areas.

The popular name "jatoba" is originated from the Guarani language meaning "hard fruit tree” With a height between 15 and 20m and trunk that reaches 1m in diameter. Other names for Jatobá: field-jatoba (jatobá-do-campo), mountain jatoba (jatobá-da-serra), bark-thin jatoba (jatobá-de-casca-fina), and jataí.
Pulp: greenish or light brown has exotic aroma. When shaved produces flour which is used in recipes for cookies, cakes, breads, pastries and ice creams. It is one of the ingredients in the Granola from the Scrubland Emporium. Some benefits of jatoba flour in the diet were studied at a formulation of cookies without sugar and source of dietary fiber, diabetic or person under food restriction.
As a medicinal plant: different parts of it were already used by indigenous peoples in Brazil long before the arrival of the Portuguese people, against diarrhea, coughs, bronchitis, stomach problems and as scarring. The leaves and bark have a group of substances (ter-penes and phenols) with antifungal, antibacterial, molluscicides properties proved in several studies. From the stem is extracted jatoba wine, excellent tonic and stimulant and by the fruit and stem exudation produces a solid resin with medicinal properties.
